Stuffed Tomato Salad

4 plum tomatoes

½ of red onion (chopped)

1 cup of frozen or fresh corn

½ feta cheese (crumbled)

1 clove of garlic ( garlic is strong may want to use half)

¼ cup fresh basil

1 tablespoon of sugar

¼ cup white balsamic vinegar

¼ cup olive oil

salt and pepper to taste

 

Start by cutting all the tomatoes in half. Remove the inside guts and discard that part of the tomato. You want to keep a nice clean tomato shell. Set aside once all the tomatoes are done.

In a mixing bowl add the chopped red onion, the corn, and the feta cheese. Add a pinch of salt and pepper, toss gently and set aside.

With a blender or food processor add the garlic, basil, balsamic vinegar, sugar and a pinch of salt and pepper. Put the lid on and start blending the ingredients. Slowly add in the olive oil, until all the ingredient emulsify or become thick like a dressing.

After the dressing is made, pour it in the mixing bowl and gently start to toss them. Once everything has become coated with the dressing take a spoon and start filling the tomato shells with the mixture. Once all the tomato shells are fully loaded serve them upright away or refrigerate them and serve a couple hours later! I like to top my tomatoes with some fresh basil. Enjoy!

Pesto Grilled Cheese

I love an old fashion grilled cheese sandwich, but sometimes I crave something with a little more flavor.  I came up with this recipe when I had some pesto lying around that needed to be used! I hope you Enjoy!

Pesto Grilled Cheese

2 slices of bread

2 tablespoons of pesto

3-4 slices of white american or mozzarella cheese

1 tablespoon of butter

sprinkle of garlic powder

Take the two pieces of bread, and spread the butter on one side of each piece.  I also like to sprinkle a little garlic powder on top of the butter for extra taste.  On the non butter sides of the bread, spread the pesto sauce on both sides of the bread and lay the cheese down. Place the bread together so the butter sides are facing out. With a frying pan on medium heat, place the sandwich in the pan and let it cook for about 3 mins on both sides or until cheese is completely melted. Take out of the pan let cool for a minute and serve with soup or chips! Enjoy!

Blackberry Jalapeño Sauce

I love blackberries and I wanted to create a sauce that included them but also had heat. I decided since I was using fresh blackberries I should use something fresh that had heat in it. I love this recipe and I am very proud of it! I hope you try it!

1 cup fresh blackberries
1 small fresh jalapeño
½ teaspoon of pure honey

Slice the jalapeño length wise and remove the seeds from only one side. Leave some seeds for a more spicy taste. Take the rest of the jalapeño and give it a rough chop and place it in a small sauce pan. Add the fresh blackberries and honey in the sauce pan as well.

With a potato masher start to mash all the ingredients together. Once the mashing is complete, cook all the ingredients on a stove top at medium to low heat for approximately 5-10 minutes. When the blackberries and jalapeño start to create a thick sauce, take the pan off the burner and let cool.

Serve the sauce warm over steaks, meatballs, cream cheese, brie, or whatever you decide. Enjoy!
